Description

Ingredients

2 cups rolled oats

2 ripe bananas, mashed

1/2 cup creamy peanut butter

1/4 cup maple syrup

1 large egg

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 teaspoon baking powder

1/4 teaspoon salt

2 tablespoons ground flaxseed

1/3 cup pumpkin seeds

1/3 cup raisins

1/3 cup dark chocolate chips


Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. Mash the bananas in a large bowl until mostly smooth.

3. Stir in the peanut butter, maple syrup, egg, and vanilla extract until creamy.

4. Add the rolled oats, cinnamon, baking powder, salt, and ground flaxseed, then mix until fully combined.

5. Fold in the pumpkin seeds, raisins, and dark chocolate chips.

6. Let the mixture rest for 5 minutes so the oats can absorb moisture.

7. Scoop the dough into 12 portions and place them on the baking sheet.

8. Gently flatten each portion into a cookie shape.

9. Bake for 12 to 15 minutes, until the edges are lightly golden and the centers are set.

10. Cool on the baking sheet for 5 minutes, then transfer to a rack before storing or serving.

Notes

Use very ripe bananas for the best natural sweetness and softer texture.

Flatten the dough before baking because these cookies do not spread much in the oven.

Cool completely before storing so the cookies stay chewy instead of becoming soggy.
