Description

Quick Jamaican Cabbage is a bright, flavorful, and easy recipe that turns simple vegetables into a fast side dish packed with island-style flavor. This quick dinner side is made with tender cabbage, sweet carrots, red bell pepper, thyme, garlic, scallions, and a little Scotch bonnet warmth, making it perfect for weeknight dinners, healthy food ideas, easy vegetable sides, and simple meal prep.


Ingredients

1 small green cabbage, thinly sliced

1 large carrot, julienned or thinly sliced

1 red bell pepper, thinly sliced

1 small yellow onion, thinly sliced

3 cloves garlic, minced

2 scallions, sliced

1 teaspoon fresh thyme leaves

1 small piece Scotch bonnet pepper, finely chopped

2 tablespoons olive oil or neutral cooking oil

1/4 cup vegetable broth or water

1 teaspoon all-purpose seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh lime juice


Instructions

1. Thinly slice the cabbage, carrot, red bell pepper, onion, and scallions. Mince the garlic and finely chop a small piece of Scotch bonnet pepper.

2. Heat the oil in a large skillet over medium heat. Add the onion and cook for 2 minutes until slightly softened.

3. Stir in the garlic, thyme, and Scotch bonnet pepper. Cook for 30 seconds until fragrant.

4. Add the carrot and red bell pepper. Cook for 2 to 3 minutes, stirring often.

5. Add the cabbage, all-purpose seasoning, salt, and black pepper. Toss well to coat the vegetables in the seasoning.

6. Pour in the vegetable broth or water. Cover and cook for 5 to 7 minutes, stirring once or twice, until the cabbage is tender but not mushy.

7. Remove the lid, stir in the scallions, and cook uncovered for 1 to 2 minutes if extra liquid remains.

8. Finish with fresh lime juice, taste, adjust seasoning if needed, and serve warm.

Notes

Use only a small amount of Scotch bonnet pepper if you want mild heat, because it is very spicy.

Do not overcook the cabbage; it should be tender with a little bite for the best texture.

Reheat leftovers in a skillet with a tiny splash of water to keep the cabbage from drying out.
