Ingredients

1 tablespoon olive oil

1 pound ground beef

1/2 pound Italian sausage

1 medium yellow onion, diced

4 cloves garlic, minced

2 tablespoons tomato paste

1 can 28 ounces crushed tomatoes

2 cups marinara sauce

5 cups beef broth

2 teaspoons Italian seasoning

1 teaspoon dried basil

1/4 teaspoon red pepper flakes

18 ounces cheese tortellini

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

3/4 cup ricotta cheese

2 tablespoons fresh parsley or basil, chopped

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a large Dutch oven or soup pot over medium-high heat. Add ground beef and Italian sausage, then cook until browned, breaking the meat apart as it cooks.

2. Add diced onion and cook for 3 to 4 minutes until softened. Stir in minced garlic and cook for 30 seconds.

3. Stir in tomato paste and cook for 1 minute to deepen the tomato flavor.

4. Add crushed tomatoes, marinara sauce, beef broth, Italian seasoning, dried basil, red pepper flakes, salt, and black pepper. Stir well.

5. Bring the soup to a gentle boil, then reduce the heat and simmer for 15 to 20 minutes.

6. Add cheese tortellini and cook according to package directions, usually 3 to 5 minutes for fresh tortellini.

7. Reduce the heat to low. Stir in heavy cream and grated Parmesan until the soup is creamy and smooth.

8. Ladle into bowls and top with mozzarella, ricotta, extra Parmesan, and fresh parsley or basil.

9. Serve hot with garlic bread, salad, or roasted vegetables.

Notes

Add the tortellini near the end so it stays tender and does not become mushy.

For leftovers, store the soup with extra broth because tortellini absorbs liquid as it sits.

For the richest flavor, use both ground beef and Italian sausage, then finish each bowl with ricotta and Parmesan.
