Description

This Ritz Cracker Chicken Casserole is a creamy, crunchy, family-friendly easy dinner that turns cooked chicken, a savory sauce, and buttery crackers into the ultimate comfort food bake. It is perfect for quick dinner ideas, cozy weeknight meals, potluck food ideas, easy recipe planning, and simple chicken casserole recipes that taste rich, warm, and homemade.

Ingredients

3 cups cooked chicken, shredded or chopped

1 can 10.5 ounces cream of chicken soup

1 cup sour cream

1/2 cup chicken broth

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1 cup shredded cheddar cheese, optional

1 sleeve Ritz crackers, crushed

1/2 cup unsalted butter, melted

1 tablespoon fresh parsley, chopped, optional

Instructions

1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2. In a large bowl, stir together the cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, and black pepper until smooth.

3. Fold in the cooked chicken until fully coated in the creamy sauce. Stir in the cheddar cheese if using.

4. Spread the chicken mixture evenly into the prepared baking dish.

5. In a separate bowl, combine the crushed Ritz crackers with the melted butter.

6. Sprinkle the buttered cracker crumbs evenly over the chicken filling.

7. Bake uncovered for 25 to 30 minutes, or until the casserole is hot and bubbling and the topping is golden brown.

8. Let the casserole rest for 5 minutes, then garnish with parsley if desired and serve warm.

Notes

Use rotisserie chicken to make this casserole faster and add extra flavor.

Add the Ritz topping right before baking so it stays crisp and buttery.

Let the casserole rest for a few minutes after baking so the creamy filling sets slightly before serving.
