Ingredients
2 pounds carrots, peeled and trimmed
3 tablespoons olive oil
6 garlic cloves, peeled
1 tablespoon fresh rosemary, finely chopped
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon honey or maple syrup, optional
1 tablespoon fresh lemon juice
1 tablespoon fresh parsley, chopped, optional
Instructions
1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
2. Peel and trim the carrots, then cut thick carrots in half lengthwise so the pieces are similar in size.
3. Place the carrots and garlic cloves on the baking sheet.
4. Drizzle with olive oil, then add rosemary, salt, black pepper, and honey or maple syrup if using.
5. Toss until the carrots are evenly coated, then spread them into a single layer.
6. Roast for 25 to 35 minutes, turning once halfway through, until tender and caramelized at the edges.
7. Remove from the oven and drizzle with lemon juice.
8. Garnish with parsley if desired and serve warm.
