4 cups mixed raw unsalted nuts

1/4 teaspoon cayenne pepper
1 teaspoon fine sea salt
1 teaspoon vanilla extract
1 tablespoon finely chopped fresh rosemary, optional
1/2 teaspoon flaky salt, for finishing
Instructions
1. Preheat the oven to 325°F and line a large rimmed baking sheet with parchment paper.
2. In a large mixing bowl, whisk together melted butter, maple syrup, brown sugar, cinnamon, smoked paprika, garlic powder, cayenne pepper, sea salt, and vanilla extract.
3. Add the mixed nuts and toss well until every nut is evenly coated.
4. Spread the coated nuts in a single layer on the prepared baking sheet.
5. Roast for 18 to 22 minutes, stirring once halfway through, until fragrant and lightly caramelized.
6. Remove from the oven and sprinkle with rosemary and flaky salt if using.
7. Let the nuts cool completely on the baking sheet so they crisp up.
