Ingredients

2 medium butternut squash, peeled, seeded, and cubed

1 head garlic, cloves peeled

2 tablespoons olive oil

3 tablespoons butter

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 teaspoon fresh thyme leaves

1/4 cup warm milk, cream, or vegetable broth

1 tablespoon melted butter or olive oil for serving

1 teaspoon extra fresh thyme for garnish


Instructions

1. Preheat the oven to 400°F and line a large baking sheet with parchment paper.

2. Add the cubed butternut squash and peeled garlic cloves to the baking sheet.

3. Drizzle with olive oil, then season with salt, black pepper, and fresh thyme. Toss until evenly coated.

4. Roast for 35 to 45 minutes, turning once halfway through, until the squash is fork-tender and lightly caramelized.

5. Transfer the warm roasted squash and garlic to a large bowl.

6. Add the butter and mash until creamy using a potato masher.

7. Stir in warm milk, cream, or vegetable broth a little at a time until the mash reaches your preferred texture.

8. Taste and adjust the seasoning with more salt or pepper if needed.

9. Spoon into a serving bowl and finish with melted butter or olive oil, extra thyme, and cracked black pepper.

Notes

Roast the squash until the edges are lightly browned for the best flavor; pale squash will taste less rich.

For an extra-smooth mash, use an immersion blender, but stop as soon as it becomes creamy.

Warm the milk, cream, or broth before adding it so the mash stays hot and silky.
