Ingredients
20 mini sweet peppers
6 ounces goat cheese
1 tablespoon olive oil
1 tablespoon chopped fresh herbs (like thyme or parsley)
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Wash and dry the mini sweet peppers. Slice them in half lengthwise and remove the seeds, leaving stems on for presentation if desired.
2. Preheat the oven to 400°F (200°C). Arrange pepper halves on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
3. Roast the peppers for 15–20 minutes, or until they’re tender and slightly blistered on the edges.
4. Remove from the oven and let them cool for a few minutes.
