Ingredients

2 cups all-purpose flour

3/4 cup brown sugar

1/2 cup molasses

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1 large egg

3/4 cup buttermilk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

2 tablespoons coarse sugar, optional


Instructions

1. Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners or grease the cups lightly.

2. In a large mixing bowl, whisk together the flour, brown sugar, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.

3. In a separate bowl, whisk the molasses, egg, buttermilk, melted butter, and vanilla extract until smooth.

4. Pour the wet ingredients into the dry ingredients and stir gently just until combined. Do not overmix.

5. Divide the batter evenly among the muffin cups, filling each about three-quarters full.

6. Sprinkle the tops with coarse sugar if using.

7. Bake for 16 to 20 minutes, until the tops are set and a toothpick inserted near the edge comes out clean.

8. Cool in the pan for 5 minutes, then transfer the muffins to a wire rack to cool completely or serve warm.

Notes

Do not overmix the batter or the muffins can turn out heavy instead of tender.

For the best texture, bring the egg and buttermilk close to room temperature before mixing.
