Ingredients

4 salmon fillets (about 6 oz each)

1/4 cup brown sugar, packed

2 tablespoons Dijon mustard

1 tablespoon soy sauce

2 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

2 tablespoons olive oil, divided

1/2 lemon, juiced

Salt and freshly ground black pepper, to taste


Instructions

1. Preheat your oven to 400°F (200°C). Pat the salmon fillets dry and season both sides lightly with salt and pepper.

2. In a small bowl, whisk together the brown sugar, Dijon mustard, soy sauce, garlic, rosemary, and 1 tablespoon of olive oil until smooth.

3. Heat the remaining 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Place salmon fillets skin-side down (or presentation side down if skinless) and sear for 2-3 minutes until golden. Flip and cook for 1 more minute.

4. Spoon the brown sugar glaze generously over the salmon. Transfer the skillet to the oven and bake for 8–10 minutes, until the salmon flakes easily with a fork.

5. Remove from the oven, squeeze over the lemon juice, and spoon some of the pan sauce over each fillet. Garnish with extra rosemary if desired. Serve immediately.

Notes

Be sure not to overcook the salmon. Check for doneness after 8 minutes—salmon should flake easily but still be moist.

For a gluten-free version, swap regular soy sauce for tamari or another gluten-free alternative.

The glaze can be made up to 2 days in advance and kept refrigerated until ready to use.
