Ingredients
1 lb ground turkey
3 cups cooked jasmine rice
1 red bell pepper, diced
4 green onions, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/4 cup low-sodium soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 tablespoon water
1 teaspoon cornstarch
1 to 2 teaspoons sriracha or chili garlic sauce, optional
1 tablespoon sesame seeds
1/4 cup fresh cilantro, chopped
1 tablespoon neutral oil
Instructions
1. Whisk together soy sauce, honey, rice vinegar, sesame oil, and sriracha in a small bowl. In another small cup, mix water and cornstarch until smooth.
2. Heat neutral oil in a large skillet over medium-high heat. Add garlic, ginger, and the white parts of the green onions, then cook for 30 seconds until fragrant.
3. Add ground turkey and break it into small crumbles. Cook for 5 to 7 minutes until no longer pink and lightly browned.
4. Stir in diced red bell pepper and cook for 2 to 3 minutes until slightly softened.
5. Pour in the sauce and add the cornstarch slurry. Stir well and simmer for 1 to 2 minutes until the sauce thickens and coats the turkey.
6. Spoon cooked jasmine rice into bowls, top with the saucy turkey mixture, and garnish with sesame seeds, green onions, and cilantro.
7. Serve warm with extra sriracha, chili crisp, or lime if desired.
Notes
Use low-sodium soy sauce so the sauce stays balanced after it reduces in the skillet.
Do not overcook the ground turkey; remove it from the heat once the sauce is thick and glossy.
