Ingredients

2 sheets puff pastry, thawed

1 1/2 cups cooked shredded chicken

4 ounces cream cheese, softened

1/2 cup shredded cheddar cheese

1/3 cup yellow onion, finely chopped

2 cloves garlic, minced

2 tablespoons fresh parsley, chopped

1/2 teaspoon dried thyme

1 teaspoon Dijon mustard

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg, beaten

1 tablespoon all-purpose flour, for dusting


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper.

2. Cook the chopped onion in a skillet over medium heat for 3 to 4 minutes, until softened.

3. Add the garlic and cook for 30 seconds, then remove the skillet from the heat.

4. Stir in the shredded chicken, cream cheese, cheddar cheese, parsley, thyme, Dijon mustard, salt, and black pepper until creamy and combined. Let the filling cool.

5. Roll the puff pastry sheets lightly on a floured surface and cut into 24 equal rounds or squares.

6. Spoon filling onto 12 pastry pieces, leaving a border around each edge.

7. Top with the remaining pastry pieces, press the edges closed, and crimp with a fork.

8. Score shallow decorative lines on top of each hand pie without cutting all the way through.

9. Brush the tops with beaten egg.

10. Bake for 18 to 22 minutes, until puffed and deeply golden.

11. Cool for 5 minutes before serving warm.

Notes

Keep the puff pastry cold while assembling so it bakes up flaky and tall.

Let the filling cool before adding it to the pastry to prevent soggy bottoms.
