Ingredients

1 pound shrimp, peeled and deveined

1 tablespoon olive oil

1 tablespoon butter

1 small onion, finely chopped

4 cloves garlic, minced

1 cup full-fat coconut milk

1 tablespoon lemon juice

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped parsley or cilantro

Instructions

1. Pat the shrimp dry and season them with paprika, salt, and black pepper.

2. Heat the olive oil and butter in a large skillet over medium heat.

3. Add the chopped onion and cook for 3 to 4 minutes until softened.

4. Stir in the garlic and cook for 30 seconds until fragrant.

5. Add the shrimp in a single layer and cook for 1 to 2 minutes per side until they begin to turn pink and lightly golden.

6. Pour in the coconut milk and stir gently to combine.

7. Simmer for 3 to 5 minutes until the sauce is slightly thickened and the shrimp are fully cooked.

8. Stir in the lemon juice and taste for seasoning.

9. Sprinkle with chopped parsley or cilantro.

10. Serve hot with rice, noodles, or crusty bread.

Notes

Use full-fat coconut milk for the creamiest and most flavorful sauce.

Do not overcook the shrimp, because they can turn rubbery very quickly.

Add a pinch of red pepper flakes if you want a little heat in the sauce.
