This Simple Rotel Dip With Ground Beef is a quick appetizer that turns a few easy ingredients into a warm, creamy, crowd-pleasing dish. Made with seasoned beef, melty cheese, and Rotel tomatoes, it is perfect for game day, party snacks, easy dinner ideas, healthy snack swaps with veggies, and all kinds of food ideas when you need an easy recipe fast.

Ingredients

1 pound ground beef

10 ounces Rotel tomatoes with green chilies, undrained

16 ounces Velveeta cheese, cubed

4 ounces cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon chili powder

1/4 teaspoon black pepper

1 jalapeno, finely diced, optional

1/2 cup diced tomatoes or pico de gallo, for topping

2 tablespoons chopped cilantro, optional

Tortilla chips, for serving

Instructions

1. Brown the ground beef in a skillet over medium heat, breaking it into small crumbles as it cooks. Drain any excess grease.

2. Stir in the garlic powder, onion powder, chili powder, and black pepper, then cook for 1 minute.

3. Lower the heat and add the Velveeta, cream cheese, and undrained Rotel tomatoes.

4. Stir gently until the cheeses are fully melted and the dip is smooth and creamy.

5. Add a splash of milk if you want a thinner consistency.

6. Transfer to a serving bowl or slow cooker to keep warm.

7. Top with diced tomatoes or pico de gallo, jalapeno, and cilantro if desired.

8. Serve warm with tortilla chips.

Notes

Drain the beef well so the dip stays creamy instead of greasy.

Keep the heat low once the cheese is added to prevent scorching.

Reheat leftovers slowly with a small splash of milk to bring back the smooth texture.
