Ingredients
3 pounds chuck roast
1 large onion, thinly sliced
3 cloves garlic, minced
4 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
6 French rolls
6 slices provolone cheese
1 tablespoon chopped fresh parsley
Instructions
1. Place the sliced onion and minced garlic in the bottom of the slow cooker.
2. Season the chuck roast with salt, black pepper, and dried thyme. Place it on top of the onions.
3. Pour in the beef broth, Worcestershire sauce, and soy sauce.
4. Cover and cook on low for 8 to 9 hours or on high for 4 to 5 hours, until the beef is very tender.
5. Remove the beef and shred it with two forks. Return the shredded beef to the slow cooker and let it soak in the broth for 10 to 15 minutes.
6. Split the French rolls and fill them with the shredded beef. Top each sandwich with provolone cheese.
7. Place the sandwiches open-faced under the broiler for 1 to 2 minutes, until the cheese is melted and the bread is lightly toasted.
8. Serve hot with small bowls of the cooking broth for dipping. Garnish with fresh parsley if desired.
Notes
Toast the rolls before serving so they hold up better when dipped into the au jus.
For even deeper flavor, sear the roast in a hot skillet before adding it to the slow cooker.
Store leftover beef in the broth to keep it moist and flavorful when reheating.
