Ingredients

3 pounds potatoes, peeled and cut into chunks

1 large yellow onion, thinly sliced or finely chopped

6 tablespoons unsalted butter

3/4 cup whole milk, warmed

1/3 cup sour cream

2 cloves garlic, minced

1 1/2 teaspoons kosher salt, plus more for boiling water

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Place the peeled potato chunks in a large pot and cover with cold water by about 1 inch. Add salt to the water.

2. Bring to a boil, then reduce to a simmer and cook for 15 to 20 minutes, or until the potatoes are fork-tender.

3. While the potatoes cook, melt the butter in a skillet over medium-low heat. Add the onion and a pinch of salt, then cook for 12 to 15 minutes until soft and lightly golden.

4. Stir the garlic into the onions and cook for 30 seconds, then remove the skillet from the heat.

5. Drain the potatoes well and return them to the warm pot for 1 to 2 minutes so excess moisture evaporates.

6. Mash the potatoes until mostly smooth, then gradually add the warm milk.

7. Fold in the sour cream and most of the onion-butter mixture. Stir gently until creamy.

8. Season with salt and black pepper to taste.

9. Spoon into a serving bowl, top with the remaining onions, garnish with parsley, and serve warm.

Notes

Warm the milk before adding it so the potatoes stay smooth and creamy.

Do not overmix the potatoes, or they may turn gluey.

Cook the onions slowly so they become sweet and soft instead of sharp.
