Description

Soft Peanut Butter Cookies With Chocolate Kisses are the perfect easy recipe for cookie trays, holiday baking, lunchbox treats, and sweet food ideas when you want something simple but impressive. These soft peanut butter cookies bake up tender and lightly crinkled, then each one is topped with a chocolate kiss for a classic dessert that works for parties, quick snacks, after-dinner sweets, and cozy baking ideas.

Ingredients

1/2 cup unsalted butter, softened

3/4 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup light brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup granulated sugar for rolling

30 chocolate kisses, unwrapped

Instructions

1. Preheat the oven to 350°F and line two baking sheets with parchment paper.

2. Unwrap the chocolate kisses and set them aside so they are ready when the cookies come out of the oven.

3. In a large bowl, beat the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and creamy.

4. Add the egg and vanilla extract, then mix until fully combined.

5. In a separate bowl, whisk together the flour, baking soda, and salt.

6. Add the dry ingredients to the peanut butter mixture and mix just until a soft dough forms.

7. Scoop tablespoon-sized portions of dough and roll each one into a ball.

8. Roll each dough ball in granulated sugar and place them 2 inches apart on the prepared baking sheets.

9. Bake for 8 to 10 minutes, until the cookies are puffed and lightly set around the edges.

10. Immediately press one chocolate kiss into the center of each warm cookie.

11. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Use creamy shelf-stable peanut butter for the softest and most reliable cookie texture.

Do not overbake the cookies; they should look slightly soft in the center when removed from the oven.

Let the chocolate kisses set completely before stacking or storing the cookies.
