4 tablespoons unsalted butter, melted

1/2 cup strawberry preserves

6 fresh strawberries, chopped small for garnish

2 tablespoons fresh mint leaves, optional for garnish


Instructions

1. Beat the softened cream cheese, powdered sugar, vanilla extract, and lemon juice in a large bowl until smooth and fluffy.

2. Fold in the whipped topping gently until the cheesecake filling is creamy and evenly combined.

3. Cover the bowl and chill the filling for at least 1 hour, or until firm enough to scoop.

4. Crush the golden sandwich cookies and freeze-dried strawberries into coarse crumbs using a food processor.

5. Stir the strawberry gelatin powder and melted butter into the crumbs until lightly moistened.

6. Line a baking sheet with parchment paper and scoop the chilled cheesecake filling into tablespoon-size portions.

7. Roll each portion into a ball, working quickly so the filling stays cold.
