Description

These Strawberry Velvet Cheesecake Truffle Bites are a dreamy bite-sized dessert with a soft strawberry velvet cake center, creamy cheesecake richness, and a smooth white chocolate coating. Ingredients

1 box strawberry cake mix

1 tablespoon unsweetened cocoa powder

3 large eggs

1/2 cup vegetable oil

1 cup buttermilk

1 teaspoon red gel food coloring

8 ounces cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

20 ounces white chocolate melting wafers

1/2 cup pink candy melts

1/4 cup freeze-dried strawberries, crushed

2 tablespoons white sprinkles or sugar pearls


Instructions

1. Preheat the oven to 350°F and grease or line a 9×13-inch baking pan.

2. In a large bowl, mix the strawberry cake mix, cocoa powder, eggs, vegetable oil, buttermilk, and red gel food coloring until smooth.

3. Spread the batter into the prepared pan and bake for 24 to 28 minutes, or until a toothpick inserted in the center comes out clean.

4. Let the cake cool completely, then crumble it finely into a large bowl.

5. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.

6. Add the cream cheese mixture to the cake crumbs and mix until a soft dough forms.

7. Scoop tablespoon-sized portions and roll them into smooth balls.

8. Place the balls on a parchment-lined baking sheet and chill for at least 45 minutes.

9. Melt the white chocolate wafers until smooth, then dip each chilled truffle and place it back on the parchment.

10. Melt the pink candy melts and drizzle over the coated truffles.

11. Sprinkle with crushed freeze-dried strawberries, reserved cake crumbs, or white sprinkles while the drizzle is still soft.

12. Let the coating set completely, then serve chilled.

Notes

Use fully cooled cake before mixing it with cream cheese so the filling stays thick and easy to roll.

Chill the truffle balls until firm before dipping so they keep their round shape in the melted chocolate.

Work in small batches while coating, keeping the remaining truffles cold until ready to dip.
