These Sweet and Creamy Lemon Bar Truffles are bright, tangy, and irresistibly smooth, with all the flavor of classic lemon bars in an easy no-bake dessert bite. Ingredients

2 cups finely crushed lemon sandwich cookies or lemon shortbread cookies

8 ounces cream cheese, softened

1/3 cup lemon curd

1 tablespoon fresh lemon zest

1 tablespoon fresh lemon juice

1/2 cup white chocolate chips, melted and slightly cooled

1 teaspoon vanilla extract

1/8 teaspoon fine sea salt

1 cup powdered sugar, for coating

2 to 4 tablespoons extra cookie crumbs or graham cracker crumbs, only if needed


Instructions

1. Add the lemon cookies to a food processor and pulse into fine crumbs.

2. Beat the softened cream cheese in a mixing bowl until smooth and creamy.

3. Add the lemon curd, lemon zest, lemon juice, vanilla extract, and salt, then mix until fully combined.

4. Stir in the cookie crumbs and melted white chocolate until the mixture becomes thick and scoopable.

5. Cover and refrigerate the mixture for 45 to 60 minutes, or until firm enough to roll.

6. Scoop about 1 tablespoon of mixture at a time and roll into small balls.

7. Roll each truffle in powdered sugar until evenly coated.

8. Chill the truffles for at least 30 minutes before serving.

9. For a thicker coating, roll the chilled truffles in powdered sugar a second time just before serving.

Notes

Use softened cream cheese so the filling blends smoothly without lumps.

If the mixture is too sticky after chilling, add extra cookie crumbs 1 tablespoon at a time until it holds its shape.

For the prettiest finish, roll the truffles in powdered sugar once after shaping and again right before serving.
