Ingredients

1 lb boneless skinless chicken thighs, cut into bite-sized pieces

1 tablespoon cornstarch

2 tablespoons neutral oil

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon fish sauce

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon lime juice

1/2 teaspoon red chili flakes

2 tablespoons chopped fresh cilantro

1 red chili, thinly sliced

3 cups cooked jasmine rice

2 lime wedges, for serving


Instructions

1. Pat the chicken dry, place it in a bowl, and toss it with the cornstarch until lightly coated.

2. In a separate bowl, whisk together the sweet chili sauce, soy sauce, honey, fish sauce, garlic, ginger, lime juice, and red chili flakes.

3. Heat the neutral oil in a large skillet over medium-high heat.

4. Add the chicken in a single layer and cook for 5 to 7 minutes, turning occasionally, until browned and nearly cooked through.

5. Pour the sauce into the skillet and stir well to coat the chicken evenly.

6. Reduce the heat to medium and simmer for 2 to 4 minutes until the sauce thickens and turns glossy.

7. Remove the skillet from the heat and stir in half of the chopped cilantro.

8. Serve the chicken over cooked jasmine rice and garnish with the remaining cilantro, sliced red chili, and lime wedges.

Notes

Chicken thighs stay juicier than chicken breast, but either can be used if you watch the cooking time carefully.

For a milder version, reduce the chili flakes and leave out the sliced red chili garnish.

A splash of water can be added while reheating leftovers to loosen the sauce and keep the chicken glossy.
