Ingredients
8 oz cream cheese, softened
1 cup sour cream
1/2 cup mayonnaise
10 oz diced tomatoes with green chiles, drained well
1 1/2 cups shredded sharp cheddar cheese
6 slices bacon, cooked and crumbled
3 green onions, thinly sliced
1 tsp garlic powder
1/2 tsp black pepper
2 tbsp fresh dill or parsley, chopped
crackers, tortilla chips, or vegetable sticks for serving
Instructions
1. Let the cream cheese soften at room temperature until smooth and easy to mix.
2. In a medium bowl, stir together the cream cheese, sour cream, and mayonnaise until fully combined.
3. Mix in the garlic powder and black pepper.
4. Fold in the drained diced tomatoes with green chiles, shredded cheddar cheese, crumbled bacon, and green onions.
5. Cover the bowl and chill the dip for at least 1 hour so the flavors blend and the texture firms up.
6. Transfer to a serving bowl and top with fresh dill or parsley before serving.
7. Serve chilled with crackers, tortilla chips, or fresh vegetables.
Notes
Use full-fat cream cheese for the creamiest texture and best flavor.
Drain the tomatoes with green chiles very well so the dip does not become watery.
Make it a few hours ahead for even better flavor and easier party prep.
