Ingredients

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon fine sea salt

1 cup unsalted butter, softened

3/4 cup light brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 large egg yolk

2 teaspoons vanilla extract

1 cup semisweet chocolate chips

1 cup chopped dark chocolate

1 teaspoon flaky sea salt, optional for topping


Instructions

1. Whisk the flour, baking soda, and fine sea salt together in a medium bowl.

2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy.

3. Add the egg, egg yolk, and vanilla extract, then beat until smooth.

4. Add the dry ingredients to the wet ingredients and mix just until combined.

5. Fold in the chocolate chips and chopped dark chocolate.

6. Cover and chill the dough for at least 30 minutes.

7. Preheat the oven to 350°F and line baking sheets with parchment paper.

8. Scoop the dough into 2-tablespoon balls and place them a few inches apart.

9. Bake for 10 to 12 minutes, until the edges are golden and the centers still look slightly soft.

10. Sprinkle with flaky sea salt, if using, and let the cookies cool on the baking sheet for 5 minutes before moving to a wire rack.

Notes

Chill the dough for at least 30 minutes so the cookies bake thicker and develop better flavor.

Pull the cookies from the oven while the centers still look slightly soft because they will continue setting on the hot pan.

Use a mix of chocolate chips and chopped chocolate for the best balance of classic texture and gooey chocolate pockets.
