Ingredients
1 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar
1 large egg yolk
2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
2 tablespoons cornstarch
1/4 teaspoon salt
20 soft caramel candies, unwrapped
2 tablespoons heavy cream
3/4 cup milk chocolate chips
1 teaspoon flaky sea salt
Instructions
1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
3. Mix in the egg yolk and vanilla extract until smooth.
4. Add the flour, cornstarch, and salt, then mix just until a soft dough forms.
5. Scoop the dough into 1-inch balls and place them on the prepared baking sheets.
6. Press a thumbprint or the back of a small spoon into the center of each dough ball.
7. Bake for 10 to 12 minutes, until the edges are lightly set and the bottoms are pale golden.
8. If the centers puff up, gently press them down again while the cookies are still warm.
9. Let the cookies cool completely on a wire rack.
10. In a microwave-safe bowl, melt the caramel candies with the heavy cream in short intervals, stirring until smooth.
11. Spoon the caramel into the center of each cooled cookie.
12. Melt the milk chocolate chips until smooth, then drizzle the chocolate over the tops of the cookies.
13. Sprinkle lightly with flaky sea salt.
14. Let the caramel and chocolate set before serving.
Notes
Chill the shaped dough for 15 minutes if your kitchen is warm so the cookies hold their shape better.
Use soft caramels instead of thin caramel sauce so the centers stay thick and glossy.
Let the cookies cool fully before filling them or the caramel may slide out of the centers.
