Ingredients

3 cups cooked shredded chicken

8 flour tortillas

1 can cream of chicken soup

1 cup sour cream

1 can diced green chiles

2 cups shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup finely chopped onion

1 teaspoon garlic powder

1 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped fresh cilantro


Instructions

1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.

2. In a large bowl, mix the shredded chicken, cream of chicken soup, sour cream, diced green chiles, chopped onion, garlic powder, cumin, salt, black pepper, 1 1/2 cups Monterey Jack cheese, and 1/2 cup cheddar cheese.

3. Place a layer of flour tortillas in the bottom of the prepared baking dish, overlapping as needed.

4. Spread half of the chicken mixture evenly over the tortillas.

5. Add another layer of tortillas, then spread the remaining chicken mixture on top.

6. Finish with a final layer of tortillas and sprinkle the remaining Monterey Jack and cheddar cheese over the top.

7. Bake uncovered for 25 to 30 minutes, until the casserole is hot, bubbly, and the cheese is melted and lightly golden.

8. Let the casserole rest for 10 minutes, then garnish with chopped fresh cilantro and serve.

Notes

Use rotisserie chicken to make prep even faster and easier.

Let the casserole rest before serving so the layers hold together better.

For extra flavor, top each serving with sour cream, avocado, or sliced jalapeños.
