Ingredients
1 pound ground beef
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
2 carrots, peeled and diced
2 cups pumpkin or butternut squash, cubed
1 pound baby potatoes
2 celery stalks, diced
2 tablespoons tomato paste
1 can diced tomatoes, 14.5 ounces
6 cups beef broth
1 can cannellini beans, 15 ounces, drained and rinsed
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley or thyme, for garnish
Instructions
1. Brown the ground beef in a large soup pot over medium heat, breaking it apart as it cooks. Drain excess grease if needed.
2. Add the olive oil, onion, garlic, and celery. Cook until the onion softens and becomes fragrant.
3. Stir in the carrots, pumpkin or butternut squash, and baby potatoes. Mix well.
4. Add the tomato paste and stir until it coats the ingredients evenly.
5. Pour in the diced tomatoes and beef broth, then stir in the cannellini beans, thyme, smoked paprika, salt, and black pepper.
6. Bring the soup to a gentle boil, then reduce the heat and simmer uncovered for 30 to 35 minutes, until the vegetables are tender.
7. Taste and adjust seasoning if needed. Garnish with fresh parsley or thyme and serve hot.
Notes
Cut the potatoes into even pieces so they cook at the same rate.
For a thicker soup, mash a few potatoes and beans into the broth before serving.
This soup tastes even better the next day after the flavors have had more time to develop.
